Greek Recipe: Stewed Lamb with Curly Endive

GREEK RECIPE: Stewed Lamb with Curly Endive

  • 2 lbs lean lamb cut into 1.5" pcs.
  • 2 lbs curly endive
  • 6 Tbs olive oil
  • 2 lg onions chopped
  • 1.5 cups boiling water
  • 2 eggs
  • juice of one lemon
  • salt and pepper to taste

Seperate endive leaves, wash thoroughly, cut into 3" pcs and set aside. Heat oil in a pot and sautee onion and garlic until golden. Add lamb and brown. Add boiling water, salt and pepper. Bring to a simmer covered for about 2 hrs or until lamb is almost tender. At last estimated 15 minutes cooking time, add endive and bring to a simmer until lamb is tender. Remove from flame. Beat eggs is a bowl until fluffy. Slowly add lemon juice while beating. Slowly add 1/2 cup hot liquid from pot while beating. Pour mixture over lamb and endives and let stand 5 minutes to thicken before serving. This dish cannot be reheated. Serves 6.
