Greek Recipe: Spinach Pie

GREEK RECIPE: Spinach Pie Spanakopita

  • 12-14 pastry sheets
  • 1/2 cup olive oil
  • 1 bunch green onions chopped fine
  • 3 lbs fresh spinach, washed and chopped
  • 2 eggs beaten lightly
  • 1/2 cup fresh dill minced
  • 1/4 cup fresh parsley leaves minced fine
  • 1/2 lb. feta cheese crumbled with fork
  • salt and coarse ground pepper to taste

 

Prepare pastry sheets and set aside. Heat half the oil in a large skillet and sautee onions very lightly. Add spinach and blend thorouhgly with oil and onions. Remove from flame and set aside. Place eggs in a mixing bowl. Add dill, parsley, cheese, salt and pepper and mix thoroughly. Add spinach and blend thoroughly with other ingrediants. Grease a 9 x 13" baking pan and line with half the pastry sheets, brushing each one with olive oil. Extend sheets over rim of the pan. Spread mixture evenly over the sheets. Top with remaining pastry sheets, brushing each one with olive oil. Press sheets frimly together on rim of the pan  and trim with a sharp knife. Brush top with olive oil. Score top deeply into approximately 3" serving pieces. Bake in a pre-heated 350° oven for about 35 minutes, or until top crust is golden brown.  Remove from oven and let stand for one hour before cutting into pieces. It is best when stored for a day in the refigerator and served cold.
