Greek Recipe: Boiled Meatballs

GREEK RECIPE: Boiled Meatballs

  • 1 lb ground lean beef
  • 1 med onion grated
  • 1/4 tsp parsley flakes
  • 1 Tbs raw rice
  • 1 quart water
  • 2 eggs
  • 2 Tbs cold water
  • 1Tbs olive oil
  • salt and pepper to taste
  • juice of one lemon

Place beef, onion, rice, seasonings and 2 Tbs water in a bowl. Knead thoroughly and add a little water to make mixture pliable. Shape into balls the size of a walnut. Bring water and oil to boil, add meat balls and reduce to simmer uncovered for about 35 minutes. Remove from flame.

Beat eggs in a bowl until frothy, slowly add lemon juice while beating. Then, while beating, add 1 cup of the hot liquid which meatballs were cooked. Drain meatballs, place in a serving dish and pour egg lemon sacuce over them. Serve over steamed rice or mashed potatoes. Serves 4.
